Beer Butt Chicken

A few weeks ago at the launch of the Cambridgeshire Cookbook I got talking to Felicity from Balkan Pottery about her roast chicken pot.  It’s a great old style cooking pot with a little sealed funnel in the middle not unlike a funnel cake tin, but this one you can fill up with fun things.  Felicity kindly gave me of the chicken pots, you get one here, and this is the result!

  • 1 Whole Chicken
  • 2 tbsp Oil
  • 2 tsp Chicken Seasoning (Tesco)
  • 1 Can Piston Head Flat Tire

The simplest cooking ever, fill up the funnel with the Piston Head beer and then sit your chicken on top of it. In a small bowl mix the oil and chicken seasoning together. Using a pastry brush, brush the mix onto the chicken skin, this is a lot easier as the chicken is sitting nicely upright on its funnel and you can get to all the hard to reach bits.

Once the chicken is coated in the seasoning, put into the oven and turn it to 200c. The oven must be cold before the chicken goes in otherwise the pot will crack.  Cook the chicken for about 1 hour basting half way through.
