Portly Cooks | Boneless Ribs and Tri-Colour Slaw

Tri Colour Slaw

This one is more about the coleslaw to be honest, it’s dead easy to make and looks really pretty but, to keep your interest there are some boneless BBQ pork ribs to go with it!

  • 3 Belly Pork Strips
  • 50g Red Cabbage
  • 50g Carrot
  • 25g Spinach
  • 1 tbsp Mayonnaise
  • Portly’s BBQ Rub – Click Here

Coat the Belly Pork with a generous amount of the spice rub and then bake in the oven for about 15 minutes until they are crispy. While they cook, pour yourself a drink (mine was Campari Spritz ^) and shred the cabbage, chop the spinach and grate the carrot. Then, in a bowl mix with the mayonnaise and season well. Finally, top the ribs with the BBQ sauce of your choice and dive in!
