Portly Cooks | Roasted Cauliflower with Moroccan Style Cous Cous | Vegetarian Week

Now I’m not going to lie I cheated with the Cous Cous. I bought a packet of ready made Moroccan Cous Cous, I did add a couple of bits to make it more flavourful though. Roasted Cauliflower has for me been a revelation, it’s slightly sweet and if like me you roast it in the morning then let it sit and soak up all the flavour it’s fabulous!

  • 1/2 Head Cauliflower
  • 1/2 Packet Cous Cous (whatever flavour you fancy)
  • 1 1/2 tsp Smoked Paprika
  • 1 1/2 tsp Garlic Powder
  • Salt
  • Pepper
  • Rocket (About a handful)
  • 2 tbsp Oil

Cut the cauliflower into florets and then put into a freezer bag. With the cauliflower add 1 tsp of the garlic, 1 tsp of the paprika and some salt and pepper along with the oil. Tie the bag and give it all a good shake so that the cauliflower is well coated.

Roast the cauliflower at 200c for about 30 minutes, give it a shake half way through. When the cauliflower is nearly done, put the cous cous in a bowl, add half a tsp of paprika and garlic along with some salt and pepper. Then, pour over the boiling water until it’s just covered and leave to soak up the water.

Lastly, finely chop the rocket, stir some into the cous cous and reserve the rest to garnish the top of the cauliflower, stick everything on a plate and enjoy!
