Portly Cooks | Pea Pesto Pasta | Vegetarian Week

You can jazz this one up with some feta or blue cheese and a handful of Rocket. I however needed a quick and easy lunch as I was going to be out ALL day and with 3 ingredients it doesn’t get much simpler.

  • 75g Long Pasta
  • 100g Frozen Peas
  • 30g Pesto

Bring a pan of salted water up to the boil and then cook the pasta for about 4 minutes until its just done. After about 3 minutes add the peas to the water.

Once it’s all done drain the peas and pasta and return to the pan you cooked it in. Add the pesto and give it a good stir to make sure everything is coated. If you’re adding cheese add it at this point, stir and serve!
