This is another one of those, ‘I need to use all this up’ posts. I’ve always got chicken in the freezer and it goes with pretty much anything. Which, it turned out is what I had in my fridge.
- 2 Chicken Thighs
This can feed as many people as you need it to, so long as you have enough chicken to avoid people being disappointed. Start off by de-boning the chicken and then season well. In a pan fry the thighs skin side down with a little oil for about 4 minutes on either side. Remove from the pan and leave to rest.
In the same pan cook the potato, onion and courgettes, I sliced my courgette and potato into match sticks. Cook these for about 5 minutes and then add a handful of peas. Finally, return the chicken to the pan and cook for a futher 2 minutes and then serve.
