It’s Boxing Day, I’m sure you might be feeling slightly worse for wear and still full from yesterdays excess. However, you no doubt have a ton of leftovers.

 One being the roast potatoes you so loving spent yesterday morning basting in duck fat, making sure they were the best they could possibly be.

 Now though they sit in a bowl in the fridge, and aside from dipping them in leftover gravy (don’t judge me) straight from the fridge, what else can you do?

 Well you can this, warm the potatoes in a low oven or, if you have to in the microwave. Once they’re warm put them in a bowl and add 2 teaspoons of chilli oil, 1/2 teaspoon each of paprika and garlic powder and some rocket or salad leaves, toss together and you’ve got lunch!
