Portly Cooks | Italian Stir Fry

Some days you look in the fridge and wonder what the hell am I going to make for dinner this evening. This comes from one of those days. After searching through the fridge and discovering a few things I didn’t even realise I had, cobbling together something half decent to eat was next on the to do list.

I ended up cutting everything up and shoving it all in a pan, Courgettes, Mushrooms, Peppers, Onion and Pancetta cubes. All of which I stir fried, to bilk it out a bit I cooked off some Linguine I had in the cupboard and just before serving drizzled some balsamic vinegar into the pan. Ending in an Italian..ish stir fry.

    love it it’s always these dishes that ends up being a favourite made up from bits and pieces and yet they all come together well
