Portly Cooks | Courgette, Pesto and Blue Cheese Bavettine

Sometimes you need something simple, satisfying and quick. This one ticks all of those boxes and is a grand total of 4 ingredients.

  • 80g Bavettine or Spaghetti
  • 1 tbsp Pesto
  • 30g Blue Cheese
  • 1 Courgette

Start by boiling the kettle, while that sorts itself out chop up your courgette.  Once its boiled, put your pasta in a pan with a good pinch of salt and pour over the water.

While the pasta cooks, in another pan fry off the courgette for about 3 minutes. Once thats sorted?, crumble your blue cheese.

The pasta should be cooked after about 5 minutes, drain the pasta and return it to the pan,add the courgette, pesto and half the blue cheese and give it a good stir. Finally stick it in a bowl, crumble over the rest of the cheese and enjoy.
