Portly Cooks | Chocolate Chip Muffins

Baking can be therapeutic, it’s relaxing to stand a whip up a batch of muffins and on the plus side it makes your house smell amazing!  I was taught how to bake by my mum when I was about 3 years old and have used this same recipe ever since and it never fails. Apologies for the mixing of imperial and metric again but the chocolate chips come in a packet…

  • 6oz Self Raising Flour
  • 6oz Caster Sugar
  • 6oz Butter
  • 3 eggs
  • 1 tbsp Cocoa Powder
  • 100g White Chocolate Chips

This recipe makes about 12 decent sized muffins or 24 cupcakes depending how you feel. It’s also really simple, put everything apart from the chocolate chips into a bowl and whisk together with an electric whisk (unless you want a mini workout and fancy doing it by hand).

Once everything is mixed together, fold in the chocolate chips. Then put the mixture into muffin cases. Once you’ve done that, bake in the oven at 180c for 20-25 minutes, have a look at them at 20 minutes, if they need more time, give them it.

All that’s left is the fun part, wait for them to cool (or don’t) and have them with a cup of tea. Or if they’re still warm some ice cream.
