Portly Cooks | Baked Lamb Chop, Aubergine and Courgette

Lamb and Aubergine

We keep being told people are getting busier and busier and have no time to cook. This one should help you out of that problem.

  • 4 Lamb Chops
  • ½ Courgette
  • ½ Aubergine
  • ½ Sun Dried Tomatoes
  • ½ Red Onion
  • Clove of Garlic
  • Balsamic Vinegar

As I said this one is nice and simple, a chuck in the oven and leave it alone recipe leaving you free to do what you like.  Start by chopping the aubergine and courgette into chunks and slicing the sun dried tomatoes.  Then, slice the onion and put all the chopped vegetables into a bowl, crush the garlic over the top and give it a good mix.  Put the vegetables in the bottom of a oven proof dish and put your lamb chops on top. Finally bake in the oven at 200c for about 15 minutes, then as the dish comes out of the oven drizzle with the balsamic.
