Lunch can be a pretty boring affair sometimes, just an endless game of what can I put between two slices of bread to munch at my desk while I secretly watch YouTube videos at work. Well it doesn’t always have to be like that, you can actually have something tasty, super quick and easy to make. I was recently brought as microwave and as such have been experimenting with what ‘ready meals’ I can make for it. This one worked particularly well.
- 1x 130g Packet Uncle Bens Microwave Basmati Rice
- 100g Beef Skirt cut into thin strips
- ½ packet of stir fry vegetables (I cheated here and the bag itself was only a pound)
- ½ red onion, sliced
- 60ml Kikkoman Soy Sauce
- ½ tsp garlic powder
This is a 2 stage process, part one involves some quick actual cooking, part 2 involves zapping part one in a microwave. So, start off by cutting the beef into thin strips, you can of course use any other meat, chicken works very nicely, or you can leave it out altogether.
Next slice the onion and then in a hot wok or heavy bottomed pan, fry off the beef strips until they are just cooked (maybe about a minute of stir frying). Add the onion and then the stir fry vegetables, cook them down for about 3 minutes then add the soy and rice and cook for another 2 minutes. Finally, put it into a microwavable container and your lunch is good to go.
