I bought myself some truffle oil recently and since then I’ve been putting it on everything. Well, mostly chips actually but nearly everything. For this one I thought I would leave out the chips and try it on something different.
- 3 Chicken Thighs
- 1 tsp White Truffle Oil
- 1 tbsp Rapeseed Oil
- 1 tsp Smoked Paprika
- 1 tsp Powdered Garlic
- Salt and Pepper
Put all of the ingredients in a small prep bowl and mix them together, once you’ve done that add them to the chicken, mix and leave for at least 20 minutes, if you can do this overnight the flavour will be even better!
Heat your oven to 220c and roast the chicken thighs for about 15-20 minutes. Make sure to baste them half way through with all the flavourful juices that will run out of them. You can pair them with anything you like, I did mine with mushrooms and purple asparagus. Although thinking about it now, this would work really nicely on a BBQ so long as we get some kind of summer this year!
