Grain Mustard Mackerel

Cooking in the week sometimes can feel like a chore.  You’ve finished work, got home and now need to find something to eat. Rather than reaching for a ready meal or a pizza. Fish is the ultimate fast food.  This one has only 4 ingredients and can be on your table in 20 minutes.

  • 2 mackerel fillets
  • 100g samphire
  • 1 sweetcorn halved
  • 2 tsp whole grain mustard

Pre heat your oven to 200c then, take a baking tray and drizzle with a little oil.  Lay the mackerel fillets on the tray skin side down and bake for 15 minutes.  Whilst the mackerel is in the oven, gently simmer the samphire and sweetcorn until tender.  Just before the mackerel is ready, using a pastry brush, coat the mackerel in the whole grain mustard and return to the oven for a couple of minutes. Finally, serve and enjoy!
