Good food doesn't have to be difficult…
Noodle soup is one of my comfort foods, my favourite being a tom yum packet version that just makes you feel all warm inside. This one though, is slightly different. The main reason being there actually no noodles anywhere near this noodle soup. The noodles are made from spiralized courgette! Which on the plus side makes this meal a lot less calories than its regular noodle equivalent.
Start of by spiralizing your courgette, if you don’t have a spiralizer, cut the courgette into long noodle like strips with a knife. Once that’s done thinly slice the pepper and set aside. For the ‘soup’ component of this dish mix together the soy sauce, mirin, and chicken stock. If you like you can add some ginger and garlic at this point. Place the liquid in a pan and bring to the boil.
Leave the soup to simmer and in another pan, pan fry your sea bass fillets. Start them off skin side down, when you put them in the pan hold them down for about 20 seconds as this will prevent the fillets from curling up. Cook them for around 3 minutes either side so they are nice and crispy!
When the bass is almost done add your courgette ‘noodles’ to a bowl along with the pepper. Then, pour the soup over the courgette. Finally plate up your sea bass and enjoy!
