My take on @jamieoliver Squid and Chorizo #15MinuteMeal mines got Cauliflower ‘Couscous’

Squid and Chorizo

I seem to have a thing for serving things in bowls recently and not on plates… someone else who doesn’t seem to keen on the whole plate thing is Mr Jamie Oliver. I was watching his 15 minute meals the other day and this is my version of his squid a couscous dish and it really is good!

I love squid but I’ve not been able to get proper fresh squid for ages!! That is until now. As soon as I saw it in the counter I knew I’d be having a go at this one. It nice and simple and to be fair it does only take about 15 minutes to cook and cooking squid for any longer than a few minutes can leave it rubbery and not very nice at all. Also there are very few ingredients in this but it still tastes amazing!

  • 1 squid cleaned and cut into rings
  • 1 red pepper
  • 100g chorizo
  • 1 clove of garlic
  • 25g frozen peas (for some colour)
  • 200g cauliflower (it’s the ‘couscous’)

As always I used my wok for this… start off by cutting the pepper into long strips and chopping up your chorizo into little cubes.  Next, in a blender blitz the cauliflower until it resembles the texture of couscous (trust me it works and it’s great!) Heat up your wok/pan and add a little oil and start frying the chorizo, give it about 3 minutes to make sure all the flavour of the paprika in the sausage come out into the oil. Then add the peppers garlic and peas and stir fry them for about a minute.

You’re now ready to add the squid, put it all in and stir fry for about 2 minutes making sure it gets covered in some of that fab tasting oil.  When the squid is almost done, add the cauliflower ‘couscous’ and stir it in so that everything is mixed in well.  Finish it all off with a good pinch of salt and a decent crack of black pepper and you are good to go! See literally no time at all!
