Stilton Sea Bream and Vine Tomatoes

I’ve neglected the blog for a while, it’s been rather busy!  But, I have a nice quick and easy dinner for you.  Apologies there isn’t a photo, I was half way through eating when I realised I’d not taken one.

If you scroll back through the archives you’ll see I’m a fan of Sea Bass and Sea Bream.  Both are fantastic when you need a tasty but essentially easy and quick meal.  For example Sea Bass goes rather well with potted shrimp butter and some roasted new potatoes. Although back to last night, it was oven baked Bream with vine tomatoes and melted stilton.

Oven baking the fish gives you more time, it’s one dish in the oven, you can forget about for 20 minutes and carry on with whatever you happen to be doing. Be that working from home or feeding the kids, walking the dog or simply having that extra glass of Pimms while the weather is nice. You’re going to need:

  • 2x Sea Bream Fillets
  • 2x Slices of Stilton cheese (or whatever cheese you fancy)
  • 200g vine tomatoes

I used a glass oven dish for this, it think it’s slightly easier to clean.  Brush the bottom of the dish with oil and then season with salt and pepper.  Place the bream fillets inside, skin side down, season them with a little salt and pepper and some garlic powder.  Finally around the side lay your tomatoes.  Stick it all in the oven and bake at 180 for around 20 minutes, before serving put the cheese on top of the fish and let it melt.  Finally, serve it up and enjoy!
