Now then, these lovely little things are made locally to me in the racing town of Newmarket.  My usual response for these is to melt them over Sea Bass or Sea Bream.  However, Barbara the lady who makes them, has just given me the best, and also fastest meal ever!

Move over Mr Oliver with your 15 minute meals.  This one is ready in 5 (ish). We all struggle for time in this 24/7 life, nothing is ever fast enough! This one is though Best of all for this one you only need what you have in your cupboards or your fridge and freezer!  You’ll need:

  • 1 chopped red onion
  • 1 clove garlic crushed
  • 200g chopped cherry tomatoes or a tin of chopped tomatoes
  • 1 pk spaghetti
  • 1 large pot of Potted Shrimps
  • 1 handful of roughly chopped spinach

In a wok sauté the onions until soft and then add the garlic and give a quick stir. At the same time bring your spaghetti to the boil and cook for 5 minutes or until soft. Next, chuck in your tomatoes and again give them a good stir.  The potted shrimp come frozen, there’s no need to worry about defrosting them, put the whole tub into the tomato and onion mixture and let them melt. Once the shrimps have melted into the sauce, give it a stir and then add the spaghetti to the pan. Give it all a good mix around then transfer to bowls and enjoy!
