Comfort food, I have to say there are quite a few things food wise that I would call my comfort food. Liver and Bacon with a thick onion gravy is one that is very close to the top of the list. It’s one of those dishes that reminds me home cooked meals, and pub lunches in gloomy winter months.
- 2 decent sized lambs livers
- 4 rashers of bacon (I use streaky)
- 1 red onion sliced
- 1 clove crushed garlic
- 2 stock cubes
- Gravy granules
- 2 large potatoes
Start off with the potatoes as these will take the longest, peel them, par boil, give them a rattle in the pan, then add a little oil give them another shake, stick them on a baking sheet and roast in the oven.
For the liver and bacon start by frying off the bacon in a dry pan. I use streaky as it holds a lot of fat which will come out in cooking, which you can then use to fry off your liver and onions. Once the bacon is really nice and crispy remove from the pan and set aside.
Do the same for the liver and set aside. Next, into the same pan add your onions and also the garlic and cook until the onions are soft. Sprinkle the onions with the stock cubes and pour in some boiling water so the onions are covered. Give it a quick stir around and then add the gravy granules and keep stirring until the gravy thickens. once everything is ready plate up and enjoy some comfort food!!
