Coley Steaks with a Cream Cheese Crust

Having spent most of the afternoon not sure what to cook for dinner tonight I finally decided on fish.  So after a trip to the fishmonger I came home clutching what is now in the oven.  What I brought was Coley.  I’ve decided to use simple ingredients for a satisfying end result.  I’ve smothered the Coley steaks with herb cream cheese, then on top of that a layer of Jalapenos and then topped it off with some breadcrumbs.  This dish isn’t the fanciest meal ever but it is tasty.  The freshness of the fish is complimented by the creamy topping with the jalapenos just cutting through that creamyness and the breadcrumbs adding some texture, perfect.  For the Coley you’ll need

  • 2 coley steaks
  • Jalapenos (pickled)
  • Herb cream cheese
  • Breadcrumbs

All you have to do, using the cream cheese to help the jalapenos stick to the fish, cover the top of the fish with the ingredients. Then cook in the oven for around 20 minutes. I’ve served mine with some steamed savoy cabbage and a sweet potato and swede mash http://bit.ly/RglYxB enjoy!
