Slow Roasted Leg of Lamb

This is ‘stick it in the oven and forget about it’ cooking. Slow Roasted Leg of Lamb is tasty and unbelievably easy to cook, it does take a little while (3 ½ hours) but on a weekend afternoon be it Saturday or Sunday you can make this in the morning ‘stick it in the oven.’ Go out and come home to perfectly cooked melt in the mouth lamb in fantastic gravy! For Slow Roasted Leg of Lamb you will need:

 

  • 1 or ½ leg of Lamb
  • 1 bottle red wine (one that you would drink, it makes the sauce all the better)
  • Tbsp dried thyme
  • Tbsp dried parsley
  • 3 onions sliced
  • 2 tbsp Port
  • 2 garlic cloves crushed
  • Splash of balsamic

 

Get yourself a flameproof oven dish and heat a little oil, into the pan add the onions and the crushed garlic and fry until the onions are softened.  Then add the thyme,  parsley and some salt and pepper then give it a good stir. Season the lamb, add to the onions, then pour in the wine, port and balsamic. Stick it into a preheated oven on gas mark 3/160°C and cook for three hours.  If you do decided to go out and leave it though, just give it 20 minutes on Gas 6/200°C then turn it down to slow/120°C and leave it for the day and enjoy it when you come home!
