Fish Pinwheels

So I was watching ‘The Hairy Bikers Mums Know Best’ and I watched the bikers make Minced Beef Pinwheels I thought that they looked delicious so this morning has been spent making variations on their theme.  I have made the original version which are to die for! I have also made ones with blitzed chorizo and smoked paprika and even fish pinwheels which have worked very well indeed. So I thought I would share the revelation. For the Fish Pinwheels you’ll need:

  • 500g Fish Pie Mix
  • 2 tbsp Tartare Sauce
  • Tsp dried sage
  • 1 ready rolled puff pastry sheet
  • ½ onion

In a food processor, put the fish pie mix and the onion and blitz until they are minced.  Transfer to bowl and with your hands mix in the tartare sauce and sage. Take the rolled pastry and flatten it out on the side, then cover with the fish mixture. Roll the pastry up and cut into pin wheels, glaze with a beaten egg and bake until the pastry is golden.
