Easy and Tasty Rice Dishes

Until recently I have never been the biggest fan of Rice.  I generally prefer noodles when given the choice, I have no idea why but that’s how it has been. But recently, we have been experimenting with different ways of cooking rice and also different flavours to go with it. After much experimenting I have also found what i think to be the best way to cook rice.  Use the same amount of water or stock to the amount of rice to be cooked, bring the liquid to the boil (from cold). Then simmer for ten minutes, after ten minutes take the rice off the heat and leave until ready to use with the lid still on.  It is important that you don’t remove the lid, you just have to trust that the rice is cooked. So here are a few ideas for rice dishes.

Coriander Rice 

  • 1 cup rice
  • 1 cup chicken stock
  • 1 tsp turmeric
  • Fresh coriander finely chopped

This dish is really good as a side for fish or asain style meat e.g. Teriyaki Beef, its simple enough, just add the turmeric to the chicken stock, boil your rice and just before serving stir in the fresh coriander.

Singapore Style Rice 

  • 1 cup rice
  • 1 cup chicken stock
  • 1 egg beaten
  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • a good glug of soy sauce
  • 1 red chilli finely sliced (seeds in or out its up to you)
  • 1/2 red onion diced

Cook the rice, once its cooked, fry off the the onion and the chilli then add the egg and soy and give it a good stir, finally turn the heat down a little and fry off the rice for around 3 minutes.

Rice and Peas

  • 1 cup rice
  • 1/2 cup coconut milk
  • 1/2 cup water
  • fresh or frozen peas

Cook the rice, be careful with this one as the coconut milk can sometimes catch on the bottom of the pan and no-one wants burnt rice for dinner. Once the rice is cooked stir in your peas, season liberally and serve.

Sweet Chilli Rice

  • 1 cup rice
  • 1 cup water
  • 2 tbsp Sweet Chilli Relish
  • splash soy sauce

Intially i was a bit dubious about this rice dish but, once i tried it it was really tasty and works well with a vegetable stir fry, it couldn’t be simpler. Cook the rice, stir in the relish and soy sauce, simple.
